TENDER DESCRIPTION

The service consists of ensuring the operation and continuity of Bibracte’s catering service. The selected contractor ensures the preparation of menus, the supply and storage of all foodstuffs and all products necessary, the preparation and serving of dishes, hygiene monitoring, the collection of payment for tray meals for the cafeteria (without handling cash) and services at the Chaudron (with handling cash), the setting and serving at table for exceptional services, the provision of ancillary services (cocktail, etc.), the preparation, delivery and service of the various components of the menu served at the “Le Chaudron” restaurant, and the maintenance of the premises and equipment made available to it in accordance with the requirements of this C.C.T.P. and its annexes. The market holder must have, at the sites where the services are carried out, a responsible representative who can respond on its behalf to any request from Bibracte. The categories of users attending the restaurants are, for the Glux en Glenne cafeteria: employees, groups: school pupils, others, archaeologist researchers, and guests.
